Description
Creamy, bold, and loaded with sun-dried tomato flavor, this Marry Me Chicken Pasta is a one-pot dinner favorite that’s easy enough for weeknights, but impressive enough for company.
Ingredients
3 boneless, skinless chicken breasts, cut into bite-size pieces (about 1½ pounds)
1 ½ teaspoons kosher salt
2 tablespoons extra-virgin olive oil
3 garlic cloves, minced
1 cup heavy cream
½ cup chicken stock
1 teaspoon chicken flavor “Better Than Bouillon”, (or 1 chicken bouillon cube)
½ cup freshly grated Parmesan cheese
1 (7-ounce) jar sun-dried tomatoes, drained and roughly chopped
1 teaspoon Italian seasoning
½ teaspoon freshly cracked black pepper
½ teaspoon red pepper flakes, (optional)
¼ cup thinly sliced fresh basil leaves
¾ pound penne pasta
Instructions
1. Season chicken with kosher salt.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden and cooked through. Remove and set aside.
3. In the same pan, sauté garlic until fragrant.
4. Add heavy cream, chicken stock, and bouillon. Simmer 2–3 minutes.
5. Stir in Parmesan, sun-dried tomatoes, Italian seasoning, black pepper, and red pepper flakes. Simmer until slightly thickened.
6. Return chicken to the pan. Toss in cooked pasta and fresh basil.
7. Serve hot with more Parmesan and basil if desired.
Notes
You can use chicken thighs instead of breasts for more flavor.
Skip red pepper flakes if you prefer less heat.
