Description
This arugula pear salad is fresh, lightly sweet, and full of flavor. It’s a healthy, quick salad perfect as a side or light main dish.
Ingredients
4 cups baby arugula
2 ripe pears (sliced thin)
1/3 cup crumbled goat cheese or blue cheese
1/3 cup toasted pecans or walnuts
2 tablespoons white balsamic vinegar
3 tablespoons olive oil
1 teaspoon honey
1 teaspoon Dijon mustard
Salt and black pepper to taste
Instructions
1. Wash and dry the arugula thoroughly.
2. Thinly slice the pears.
3. In a small bowl or jar, whisk together olive oil, vinegar, mustard, honey, salt, and pepper.

4. Toss arugula with dressing in a large bowl.
5. Top with sliced pears, crumbled cheese, and toasted nuts.
6. Serve immediately.
Notes
Use baby arugula for milder flavor.
Bartlett or Bosc pears work best.
Add grilled chicken to make it a complete meal.
